GetFit@wrrfc Week 1 update – Spinning, whole foods, strength and more

Here’s the weekly update from Laura, our GetFit@wrrfc member participant. We’re following her progress from week to week and happy to share her thoughts and results from week 1.

Congratulations GetFit friends! We have completed our first week!

If you missed my first post, last week I introduced myself and shared that my two goals for GetFit@wrrfc are to follow my meal plan and to lose ten pounds. I am happy to report that I have made good progress in the first week.

Look at these gorgeous and colorful pepper and onion sauté I added to my homemade burritos. It's even better than Chipotle!

For my meal plan, I picked out three recipes that I wanted to make this week. Early in the week I made a breakfast casserole because I wanted to use up some bread that I already had. The casserole turned out pretty good (with a little hot sauce added), and I ate this throughout the week for breakfast, lunch and dinner. My second recipe was for homemade burritos. My biggest weakness is Chipotle. I could seriously eat every single meal there! I realize there are some options at Chipotle that can be smart and healthy choices, but I wanted to keep the cost down as well as try to incorporate whole foods into my cooking. So I made my own burritos at home. I made 9 burritos and froze some of them so I will be able to enjoy them in the future. My third recipe was for eggplant tapenade from a new cookbook I received for Christmas called Vegan Slow Cooking for Two or Just You. I’m not a vegan, but I like the cookbook because it has a big focus on healthy recipes with lots of veggies. I put the ingredients in the crockpot this morning (Sunday) and will enjoy a nice warm meal at dinner.

How did you feel about Spinning this week? I really enjoyed it! I used to go to Spinning a lot while in college, but I had never gone to any of the Spinning classes at WRRFC. Special shout out to Lynn who always kept me smiling during Spin and Core. Thanks for all the encouragement, Lynn!

I also liked the strength workout this week. I usually have a hard time staying focused if I’m doing free weights or the machines, so I really liked being able to keep the card with me and watch the video.

I weighed myself at the end of the week and according to my own tracking I’ve already lost 2 pounds! I hope your first week went well. Let’s make week two just as great!
